Strawberry Sando

This is one of my favorite daughter's favorite treats to make.

After making hundreds of fruit sandos while working at a Japanese bakery in Palo Alto, I couldn't resist bringing one of my favorite recipes to Little Feast.

Sweet, juicy strawberries are tucked between slices of fluffy Japanese milk bread from our friends at Clover Bakery, then finished with a light vanilla cream made from heavy cream, Greek yogurt, mascarpone, and real vanilla bean paste.

It's lightly sweetened so the strawberries can shine, with a little extra protein from the Greek yogurt to make it a nourishing breakfast, lunchbox surprise, or after-school snack.
